Chapon (capon), a castrated rooster served to rich French people.

And Chapon de mer, a scorpionfish served in South of French Provence.

I dont recall ever ever ever having been mad enough to eat scorpionfish when I visited Marseilles at 19.

but Chapon, the castrated rich people's in French chicken, was served in 2010 for Thanksgiving with our good friends Sharhoo and emilie. We also served bacon roasted green beans in soy sauce and maple syrup, super duper junky fancy. i was a pretty okay cook by then.

When i worked and we never ate out and we were both fat, I cooked with Indian bottle and cans of Patak, easily available everywhere in canada. Again mostly chicken. I did not become vegetarian only until 2001.
