I made a good moosewood restaurant recipe of couscous. Artichoke hearts (in a can), garlic, 1 cup of parsley, dill, mint and tarragon ( 1 tbs each), juice of half a lemon, roasted walnuts bits (half a cup) , couscous and half a cup of scallions chopped. Served with a bit of goat cheese on top. Despite how healthy this is, hubby liked it. We can finish it off tomorrow.
