I am making bacon jam for the first time...loads of bacon, coffee, brown sugar, apple cider vinear (I used white wine vinegar), onion, garlic, maple syrup, dash of tabasco...it has another 1.5 hour to go and it is 3:30am. I guess I'll crash at 5 or 6am, because of making it at 2:30am! It is a spread recommended with fried egg, aged cheddar, tomato and avocado on toast.So we'll have it with baguette toasted tomorrow morning.
