...on baguette toasted with olive oil. I went to do grocery (90$) and cooked us two appetizers as main meals. It is from my boating recipe book I bought in Kitsilano for my father in law when they visited 6 years ago. I bought a copy for us too. The tuna tapenade was a hit way back in 2018 (I put a note in the book). Its got mascarpone cheese, lemon juice and zest, salt, capers, black olives, olive oil, parsley, dijon mustard, achovy paste, tuna and you eat it on toasted baguette with olive oil. A tapenade is a spread. For the second appetizer, I baked beets for 40 minutes at 375 then sliced them. Fried up the greens with balsamic vinegar and olive oil and salt and pepper and a pinch of white sugar. In another bowl, mixgoat cheese with lemon juice (a quarter of a lemon for 2).Pile each as a layer on crostini (toasted baguette with olive oil). Both were very satisfying for taste and satiety.
Hubby wanted dessert so went to buy ice cream and cookies next door.
